I know typically during Thanksgiving the turkey or the stuffing tends to be the heroes of the holiday spread. But for me, it’s always always about the candied yams. No question.

It’s the rounds of sweet potato slices baked to tender perfection, coated in the syrupy goodness of warm spices.

Candied Yams - How to make THE BEST homemade candied yams ever! Coated in butter, sugar, cinnamon and nutmeg. So stinking easy (and so good!).

The best part? There is absolutely no parboiling here like traditional candied yam recipes. Nope, they’re baked for an hour instead, basted in that heavenly syrup during the last 20 minutes.

When ready to serve, sprinkle with chopped pecans (and rosemary if you want that pop of color). You’ll never want to go back to canned candied yams ever again.

With football season in full throttle, we’ve been making a ton of pizzas at the DD house. And it’s been an absolute God-send to keep our freezer overstocked with this pizza dough.

With that, this BBQ pizza came together so incredibly fast, especially with some leftover rotisserie chicken we had to use up.

BBQ Chicken Pizza - You can use homemade pizza dough (or store-bought) with leftover rotisserie chicken for the best (speediest) dinner ever!

But if you don’t have any pizza dough on hand, store-bought is absolutely fine here. And if you have a pizza stone, I highly recommend using it!

But the most important thing to note is to use your absolute favorite BBQ sauce for the best results possible. You’ll want it just right – perfectly tangy and sweet in every single cheesy bite.

Instant Pot Chicken Nachos - Need to whip up the BEST EVER nachos for a crowd with minimal effort? THIS IS IT! Fully loaded and so so good.

This is one of my favorite Damn Delicious recipes for a few reasons. For starters, it’s nachos. And who doesn’t love a giant sheet pan of cheesy, fully loaded nachos?

The answer to that is no one.

Instant Pot Chicken Nachos - Need to whip up the BEST EVER nachos for a crowd with minimal effort? THIS IS IT! Fully loaded and so so good.

Secondly, this recipe is so easy. Too easy, really. There’s no searing, no browning. Nope. You dump, you set, you go.

And my last reason is the leftover chicken. The recipe only requires 2 cups of the shredded chicken so the rest is saved for later use, meaning for tacos, quesadillas, burrito bowls. You name it. I mean, the leftovers may be the best part, really.

Instant Pot Chicken Nachos - Need to whip up the BEST EVER nachos for a crowd with minimal effort? THIS IS IT! Fully loaded and so so good.

When ready to serve, load up with your favorite toppings. A blend of cheeses if you wish, pickled jalapenos, beans, more salsa…it will be utterly fantastic no matter what you choose.

And if you’re not into the chicken breast + thigh combo here, sub in your desired chicken (all breasts or all thighs). It is ALL GOOD.

Hello easiest-dinner-ever. It’s such a quick, speedy stir-fry using of course, chicken thighs (my favorite!), yielding the juiciest, most tender chicken bites ever. But don’t worry, you can swap them out for chicken breasts if dark meat is not your thing.

I also added some broccoli for those sneaky greens, soaking up all that saucy goodness. But you can use any veggies you have on hand – carrots, zucchini, cauliflower, snap peas, baby corn, you name it! They are all good here.

I know the shrimp is supposed to be the main hero and all but my goodness.

That sauce. That pooled sauce the shrimp is swimming in. Now that is the true hero here.

It’s sweet, it’s tangy, it’s buttery, it’s garlicky. It’s absolute saucy goodness. And everything you could want in a sauce.

Have some crusty bread nearby because you’ll want to sop up ALL of it, leaving zero leftovers behind.

To top it off, these bad boys are served on the butteriest brioche buns slathered with Sriracha mayonnaise (please feel free to add as little or as much Sriracha as your heat tolerance will allow you to do so), coleslaw (homemade or store-bought is totally fine here) and ALL the dill pickle chips.

Ingredients:

  • 1 1/4 cups buttermilk
  • 3/4 cup kosher pickle juice
  • 1 tablespoon Sriracha
  • 6 boneless, skinless chicken thighs
  • 1 cup all-purpose flour
  • 3/4 cup yellow cornmeal
  • 2 teaspoons baking powder
  • 1 teaspoon cayenne pepper
  • Kosher salt and freshly ground black pepper, to taste
  • 8 cups vegetable oil

For the Sriracha mayonnaise

  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha

For serving

  • 6 brioche hamburger buns, lightly toasted
  • Coleslaw
  • Dill pickle chips

Directions:

  1. In a large bowl, whisk together buttermilk, pickle juice and Sriracha.
  2. In a gallon size Ziploc bag or large bowl, combine chicken and buttermilk mixture; marinate for at least 4 hours to overnight, turning the bag occasionally.
  3. In a large bowl, whisk together flour, cornmeal, baking powder, cayenne pepper, 2 teaspoons salt and 2 teaspoons pepper.
  4. Working one at a time, remove chicken from buttermilk mixture and let excess drip off. Then dip into flour mixture, then buttermilk mixture and flour mixture again, pressing to coat.
  5. Heat vegetable oil in a large stockpot or Dutch oven over medium high heat until it registers 360 degrees F on a deep-fry thermometer.
  6. Working in batches, add chicken and fry until golden brown, turning occasionally, about 4-5 minutes. Transfer to a baking sheet fitted with a wire rack and keep warm.*
  7. In a small bowl, whisk together mayonnaise and Sriracha.
  8. To serve, spread buns with Sriracha mayonnaise, then top with chicken, coleslaw, and pickles.

Notes:

*The chicken can be kept warm, as needed, in the oven at 200 degrees F.
