Truly the most amazing braised chicken (so tender, literally falling off the bone!) served in a heavenly red wine sauce!

Easy Coq Au Vin - Truly the most amazing braised chicken (so tender, literally falling off the bone!) served in a heavenly red wine sauce!

This has quickly become one of my favorite cozy-winter meals. It’s incredibly simple with easy to find ingredients, most of which I typically have on hand.

And hello? A red wine sauce with the most tender, fall-off-the-bone chicken braised to perfection?

Easy Coq Au Vin - Truly the most amazing braised chicken (so tender, literally falling off the bone!) served in a heavenly red wine sauce!

What’s not to love? Not to mention the tender carrots and mushrooms with crisp bacon pieces (an added bonus, of course).

You can of course use other parts of the chicken as needed (ex. drumstick) but I personally prefer bone-in, skin-on chicken thighs. When ready to serve, don’t let that red wine go to waste. It will pair perfectly with this meal alongside some mashed potatoes or rice.

Easy Coq Au Vin

Truly the most amazing braised chicken (so tender, literally falling off the bone!) served in a heavenly red wine sauce!

20 minutes1 hour

Ingredients:

  • 3 slices bacon, diced
  • 6-8 bone-in, skin-on chicken thighs
  • Kosher salt and freshly ground black pepper, to taste
  • 8 ounces cremini mushrooms, halved
  • 3 shallots, quartered
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 1 cup dry red wine
  • 1 1/2 cups chicken stock
  • 4 sprigs fresh thyme
  • 3 carrots, halved lengthwise and cut into thirds
  • 2 tablespoons chopped fresh parsley leaves

Directions:

  1. Heat a large braiser over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate, reserving excess fat in the braiser.
  2. Season chicken thighs with 1 teaspoon salt and 1/2 teaspoon pepper.
  3. Working in batches, add chicken to the braiser, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside. Drain excess fat, reserving 2 tablespoons in the braiser.
  4. Add mushrooms and shallots, and cook, stirring occasionally, until mushrooms are tender and browned, about 5-7 minutes; season with salt and pepper, to taste.
  5. Stir in garlic until fragrant, about 1 minute.
  6. Whisk in flour and tomato paste until lightly browned, about 1 minute.
  7. Stir in wine, scraping any browned bits from the bottom of the braiser. Stir in chicken stock, thyme and carrots. Return chicken to the braiser.
  8. Bring to a boil; reduce heat and simmer, partially covered, turning the chicken once or twice, until chicken has completely cooked through, reaching an internal temperature of 175 degrees F, about 40-45 minutes.
  9. Stir in bacon and parsley; season with salt and pepper, to taste.
  10. Serve immediately.

Biscuit Pot Pie - The ultimate comfort food! Topped with the flakiest, mile-high biscuits ever (made ahead of time). So cozy + so darn good!

This is my favorite kind of comfort food. And it is truly the only way to use up any leftover holiday turkey in my opinion.

It combines two of the best things: a creamy, oh-so-cozy, hearty pot pie filling and the flakiest homemade biscuits. I use my flaky mile high biscuits here but if you’re in a pinch, store-bought biscuits are absolutely fine.

And the best part? Everything can be made ahead of time. When ready to serve, top with biscuits and bake until warmed through.

If you want to switch it up, you can easily swap these biscuits for these black pepper cheddar bacon biscuits or maple bacon cheddar biscuits!

Ingredients:

  • 1/4 cup unsalted butter
  • 1 sweet onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery ribs, diced
  • 3 cloves garlic, minced
  • 2 teaspoons chopped fresh thyme leaves
  • 1/4 cup all-purpose flour
  • 1/4 cup dry white wine*
  • 2 1/2 cups chicken stock
  • 1 cup half and half
  • 3 cups shredded rotisserie chicken (or turkey)
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley leaves
  • Kosher salt and freshly ground black pepper, to taste
  • Flaky Mile High Biscuits

Directions:

  1. Preheat oven to 350 degrees F.
  2. Melt butter in a large stockpot or Dutch oven over medium heat. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes. Stir in garlic and thyme until fragrant, about 1 minute.
  3. Whisk in flour until lightly browned, about 1 minute.
  4. Stir in wine, scraping any browned bits from the bottom of the stockpot.
  5. Stir in chicken stock and half and half. Bring to a boil; reduce heat and simmer, stirring occasionally, until thickened, about 6-8 minutes.
  6. Stir in chicken, peas and parsley; season with salt and pepper, to taste. Top with biscuits.
  7. Place into oven and bake until bubbly and biscuits are heated through, about 8-10 minutes.
  8. Serve immediately.

Notes:

*Additional chicken stock can be used for white wine as a non-alcoholic substitute.

Do you need a scaled down holiday dinner spread? Well, I have got you completely covered!

With two sheet pans and 45 min from start to finish, you’ll have all the holiday fixins you need. Glazed ham steaks, garlicky green beans, and mini sweet potatoes stuffed with candied pecans and toasted mini marshmallows.

An added bonus is serving these with my favorite biscuits ever (I always keep them handy in the freezer). Throw these bad boys onto the green bean sheet pan the last few minutes of cooking time for a complete (and wonderful) holiday meal.

The easiest ham dinner ever (sides included!). And everything is baked on 2 sheet pans in 45 min, start to finish!

Ingredients:

For the ham

  • 2 tablespoons apricot preserves
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon finely chopped fresh rosemary
  • Kosher salt and freshly ground pepper, to taste
  • 3 (8-ounce) ham steaks

For the sweet potatoes

  • 6 small to medium sweet potatoes
  • 3 tablespoons unsalted butter, cubed
  • 1 1/2 cups mini marshmallows
  • 1/2 cup candied pecans, chopped

For the green beans

  • 1 pound green beans, trimmed
  • 1 1/2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Kosher salt and freshly ground black pepper, to taste

For the biscuits (optional)

Directions:

  1. Preheat oven to 400 degrees F. Lightly oil two baking sheets or coat with nonstick spray.
  2. FOR THE HAM: In a small bowl, whisk together apricot preserves, Dijon, vinegar and rosemary; season with salt and pepper, to taste.
  3. Place ham steaks onto one side of the prepared baking sheet, slightly overlapping. Brush evenly with apricot preserves mixture.
  4. FOR THE SWEET POTATOES: Pierce sweet potatoes with a fork; place into microwave for 8-10 minutes, or until tender. Cut the potatoes down the center lengthwise, top with butter, marshmallows and pecans.
  5. Place sweet potatoes onto the opposite side of the ham steaks in a single layer.
  6. FOR THE GREEN BEANS: Place green beans in a single layer onto the second prepared baking sheet. Add olive oil and garlic; season with salt and pepper to taste. Gently toss to combine.
  7. Place into oven and bake until the marshmallows just start to brown and the green beans are tender, about 20-25 minutes. Add biscuits during the last 3-5 minutes of cooking time, if desired.
  8. Serve immediately.

Warm, soft, pillowy bread bites smothered in garlicky, buttery heavenly goodness. An absolute crowd-pleaser!

Ingredients:

  • 1 1/2 pounds pizza dough, homemade or store-bought
  • 1/4 cup unsalted butter, melted
  • 1 1/2 tablespoons chopped fresh parsley leaves
  • 3 cloves garlic, minced
  • 1/4 teaspoon kosher salt
  • 2 tablespoons freshly grated Parmesan
  • 1 cup marinara sauce

Directions:

  1. Let dough stand at room temperature for 30 minutes up to 1 hour.
  2. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
  3. Lightly oil the outside of a 6-ounce ramekin or coat with nonstick spray and place in the center of the prepared baking sheet. Fill with water.
  4. Using a digital scale, cut dough into 1-ounce pieces, yielding 22-24 total pieces, pressing each piece into a disk, then shaping into a ball.
  5. In a small bowl, combine butter, parsley, garlic and salt.
  6. Place dough balls onto the prepared baking sheet in a circular pattern around the ramekin. Brush tops with butter mixture; sprinkle with Parmesan.
  7. Place into oven and bake until golden brown, about 25-30 minutes. Working carefully, remove ramekin and discard water. Fill with marinara and return to the center of the baking sheet; brush tops with remaining butter mixture.
  8. Serve immediately.

Ingredients:

  • 3/4 cup whole milk (105-110 degrees F)
  • 1 1/2 teaspoons active dry yeast
  • 2 tablespoons sugar, divided
  • 1/3 cup unsalted butter, at room temperature
  • 2 tablespoons chopped fresh rosemary, divided
  • 1/2 teaspoon kosher salt
  • 1 large egg, at room temperature
  • 2 3/4 cups all-purpose flour, divided
  • 1 tablespoon unsalted butter, melted

Directions:

  1. Combine milk, yeast and 1 tablespoon sugar in a small bowl; let stand until foamy, about 5 minutes.
  2. In the bowl of an electric mixer fitted with paddle attachment, beat butter, 1 tablespoon rosemary, salt and remaining 1 tablespoon sugar on medium speed until light and fluffy, about 2 minutes. Beat in egg until well combined. Beat in yeast mixture and 1 1/2 cups flour until a smooth batter forms.
  3. Using the dough hook, gradually add remaining 1 1/4 cups flour, 1/2 cup at a time, until a soft, smooth ball of dough is formed. The dough should feel elastic and slightly tacky to the touch. Increase speed to medium-high and beat for 3 minutes.
  4. Lightly oil a large bowl or coat with nonstick spray; place dough in bowl, turning to coat. Cover with a clean dishtowel and let stand in a warm spot until dough has doubled in size, about 30 to 45 minutes.
  5. Gently deflate dough by punching down. Roll into a 10-inch rope; cut into 10 1-inch pieces, pressing each piece into a disk, then shaping into a ball.
  6. Lightly oil a 10-inch cast iron skillet or coat with nonstick spray. Place dough balls into the prepared skillet; brush tops with melted butter and sprinkle with remaining 1 tablespoon rosemary. Cover with a clean dishtowel and let stand in a warm spot until dough has doubled in size, about 30-45 minutes.
  7. Preheat oven to 375 degrees F. Place into oven and bake until golden brown, about 20-24 minutes.
  8. Serve warm.

The turkey meat comes out so incredibly tender and juicy, yielding the crispiest skin with that herb butter slathered both underneath and on top of the skin.

Ingredients:

  • 1 (5-pound) bone-in, skin-on turkey breast
  • 1 lemon, sliced
  • 6 tablespoons unsalted butter, at room temperature
  • 3 cloves garlic, minced
  • 2 teaspoons chopped fresh thyme leaves
  • 1 1/2 teaspoons chopped fresh sage leaves
  • 1 1/2 teaspoons chopped fresh rosemary
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Directions:

  1. Let turkey stand at room temperature for 30 minutes.
  2. Preheat oven to 325 degrees F. Lightly oil a 9 x 13 baking dish or coat with nonstick spray. Spread lemon slices into the prepared baking dish.
  3. In a small bowl, combine butter, garlic, thyme, sage and rosemary.
  4. Dry turkey thoroughly with paper towels. Using your fingers, carefully loosen the skin from the breast meat, spreading half of the butter mixture under the skin. Secure skin over the butter with wooden picks.
  5. Place turkey, breast side up, on top of the lemon slices. Spread remaining half of the butter mixture over the turkey; season with salt and pepper, to taste.
  6. Place into oven and bake until the turkey is completely cooked through, reaching an internal temperature of 165 degrees F, about 1 hour 30 minutes.
  7. Let stand 20 minutes before carving; serve warm with gravy, if desired.

I know typically during Thanksgiving the turkey or the stuffing tends to be the heroes of the holiday spread. But for me, it’s always always about the candied yams. No question.

It’s the rounds of sweet potato slices baked to tender perfection, coated in the syrupy goodness of warm spices.

The best part? There is absolutely no parboiling here like traditional candied yam recipes. Nope, they’re baked for an hour instead, basted in that heavenly syrup during the last 20 minutes.

Ingredients:

  • 1 cup orange juice
  • 1/2 cup dark brown sugar
  • 1/4 cup unsalted butter
  • Kosher salt and freshly ground black pepper, to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon finely chopped fresh rosemary
  • 3 pounds sweet potatoes, peeled and cut into 1/2-inch slices
  • 1/2 cup pecan halves, chopped

Directions:

  1. Preheat oven to 400 degrees F. Lightly oil a 9 x 13 baking dish or coat with nonstick spray.
  2. In a small saucepan over medium heat, combine orange juice, brown sugar, butter, 1 teaspoon salt and 1/4 teaspoon pepper until butter has melted, about 4 minutes. Remove from heat; stir in vanilla, cinnamon, nutmeg and rosemary.
  3. Place potatoes into the prepared baking dish; stir in orange juice mixture.
  4. Place into oven and bake, covered, for 40 minutes. Uncover; continue to bake for an additional 20 minutes, basting every 7-8 minutes until potatoes are tender and orange juice mixture is syrupy. Season with salt and pepper, to taste.
  5. Serve immediately, garnished with pecans, if desired.

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup pumpkin puree
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1/3 cup canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract

For the cinnamon sugar topping

  • 2 tablespoons ground cinnamon
  • 2/3 cup sugar
  • 4 tablespoons unsalted butter, melted

Directions:

  1. Preheat oven to 350 degrees F. Lightly oil a mini muffin pan or coat with nonstick spray.
  2. In a large bowl, combine flour, cinnamon, nutmeg, allspice, cloves, baking powder and salt.
  3. In a large glass measuring cup or another bowl, whisk together pumpkin puree, milk, brown sugar, canola oil, egg and vanilla.
  4. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
  5. Scoop the batter evenly into the muffin tray.
  6. Place into oven and bake for 10-12 minutes, or until a tester inserted in the center comes out clean.
  7. To make the cinnamon sugar, combine cinnamon and sugar.
  8. When the muffins are done, cool for 2 minutes and dip each muffin into the melted butter and then into the cinnamon-sugar mixture.
  9. Let cool on a wire rack.

Ingredients:

  • 2 (3.5-ounce) packages instant ramen noodles, flavor packets discarded
  • 1 1/2 tablespoons canola oil
  • 2 medium shallots, diced
  • 3 tablespoons red curry paste
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 (13.5-ounce) can coconut milk
  • 4 cups chicken stock

For the pork

  • 2 teaspoons toasted sesame oil
  • 1 pound ground pork
  • 2 cloves garlic, minced
  • 1 fresno chili, seeded and minced
  • 2 tablespoons fish sauce
  • Kosher salt and freshly ground black pepper, to taste

For serving

  • 4 soft boiled eggs, peeled and halved
  • 1/2 cup fresh cilantro leaves
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Directions:

  1. In a large pot of boiling water, cook noodles until just tender, about 2-3 minutes. Rinse under cold water and drain; set aside.
  2. Heat canola oil in a large stockpot or Dutch oven over medium heat. Add shallot, and cook, stirring frequently, until tender, about 3 minutes. Stir in curry paste, tomato paste, garlic and ginger until fragrant, about 2 minutes.
  3. Stir in coconut milk and chicken stock. Bring to a boil; reduce heat, cover and simmer until flavors have blended, about 8-10 minutes.
  4. Heat sesame oil in a large skillet over medium high heat. Add pork, garlic and fresno chili. Cook until pork has browned, about 3-5 minutes, making sure to crumble the pork as it cooks. Stir in fish sauce; season with salt and pepper, to taste.
  5. Divide noodles and broth into bowls. Top with pork, soft boiled eggs, cilantro, green onions and sesame seeds.

BBQ Chicken Pizza - You can use homemade pizza dough (or store-bought) with leftover rotisserie chicken for the best (speediest) dinner ever!

With football season in full throttle, we’ve been making a ton of pizzas at the DD house. And it’s been an absolute God-send to keep our freezer overstocked with this pizza dough.

With that, this BBQ pizza came together so incredibly fast, especially with some leftover rotisserie chicken we had to use up.

BBQ Chicken Pizza - You can use homemade pizza dough (or store-bought) with leftover rotisserie chicken for the best (speediest) dinner ever!

But if you don’t have any pizza dough on hand, store-bought is absolutely fine here. And if you have a pizza stone, I highly recommend using it!

But the most important thing to note is to use your absolute favorite BBQ sauce for the best results possible. You’ll want it just right – perfectly tangy and sweet in every single cheesy bite.

BBQ Chicken Pizza

You can use homemade pizza dough (or store-bought) with leftover rotisserie chicken for the best (speediest) dinner ever!

Ingredients:

  • 2 tablespoons olive oil
  • 1/4 cup yellow cornmeal
  • 1 pound pizza dough, homemade or store-bought
  • 1/2 cup plus 2 tablespoons favorite bbq sauce (we love Stubb’s)
  • 2 cups leftover shredded rotisserie chicken
  • 1 cup shredded smoked cheddar cheese
  • 1 cup shredded whole milk mozzarella cheese
  • 1/2 cup diced red onion
  • Kosher salt and freshly ground pepper, to taste
  • 3 tablespoons chopped fresh cilantro leaves

Directions:

  1. Preheat oven to 450 degrees F. Lightly coat a baking sheet or pizza pan with olive oil.
  2. Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. Transfer to prepared baking sheet or pizza pan.
  3. Using a small ladle, spread bbq sauce over the surface of the dough in an even layer, leaving a 1/2-inch border.
  4. Top with chicken, cheeses and onion; season with salt and pepper, to taste.
  5. Place into oven and bake for 20-24 minutes, or until the crust is golden brown and the cheeses have melted.
  6. Serve immediately, garnished with cilantro, if desired.
